Delicious crispy eggplant stack sandwiches!

Here's a fun summer recipe for crispy eggplant sandwiches (not fried!) that I recently posted and so far feedback from friends and family is scoring me a huge win!

Except for the fact that I don't always salt my eggplant slices and that seems to really irritate some people. What can I say? I can't please everyone all the time. 🤷‍♀️

These crispy and delicious eggplant sandwiches are filled with ricotta (or mozzarella) in between. The entire stack is breaded and then baked until they are just as crispy as if I had fried them. Still got your attention?
